Been there....done that. Seperate the body from the chassis: Much easier to do the chassis restoration, the body work, the wiring etc.
Remove the seams of the upper half where it attaches to the lower half. Its easy to do and looks much better.
Drop the pans or raise the body if you are tall.
Install new wiring. Just gut it. trust me on that.
Use linear actuator for the headlights.
