For the AC, I had one on my first B-GT as an add on option from Bradley (so it appears anyway). I removed it so I could run dual carbs, and when I was removing other components of the system is when I discovered that the whole car needed to be gone threw, old heat cracked wiring, rusted out pans, a total mess... So you are on the right step getting the car back in shape first prior to doing AC. The compressor on my 1600 was attached to the engine on the left side (drivers side), and ran lines to the front to all the other components.
I would recomend doing a search in the archives on the site here, then check out what some people have done on youtube for VW 1600 AC Here are 2 that I like, but there may be a clearence issue for you...
If you get a used system, Find out if it is set up for R-12 or R-134a. R-12 is the older refrigerant system that was discontinued for "contributing to global warming" and not being "Eco-friendly." There are retro fit adapters to convert R-12 to R-134a, however it would be easier in the longrun just to find a system made for it in case you ever need replacement parts.
You could more than likely find something that will work on www.thesamba.com or on www.vintageair.com . I know vintage air doesn't have a kit for VW listed, but it is EVERYTHING you need, and its all new. Here is an example of one of their kits
