The steering box does have an adjustment, although it will only take you so far. If the box is too worn, it should be replaced.
You should also check alignment, toe-in/out and wheel balance.
I will play with anything mechanical on the Volkswagen portion of my car. If anything quits, it isn't much of a problem, and if the engine dies, the worst I can do is roll to a stop. However, where brakes and steering are concerned -- life-threatening areas is they fail -- I use a competent professional.
Don't be embarrassed to ask for professional help when it's necessary.

Hi, Glenn,
Congrats on the first drive! One thing to check with the steering: Between the steering box and the upper part of the steering column is a thick, flat disk of reinforced rubber, with I think 4 bolts through it. Those tend to go bad over time. If it breaks apart while you're driving, you're hosed. It would be a good idea to take yours apart and inspect it. It's a cheap part, and easy to replace, but very important. Good luck! You're off to a good start!
MTA: SOME steering columns have the rubber disk. My GT has a Super Beetle column, so it has a universal joint, instead.
